Ingredients

Beef (Cubed) 100lb
Olive Oil 4cup
Onion(diced) 30lb
Celery(diced) 15lb
Carrot(diced) 15lb
Garlic(minced) 3cup
Tomato Paste 12lb
Tomato(diced) 24lb
Potatoes(diced) 20lb
Beef Stock (low sodium) 8gal
Kosher Salt 4cup
Peas 15lb

Procedure

  1. Preheat pressure braising pan to 360°F.
  2. Set the timer on the pressure braising pan to continuous run.
  3. Once the pan is heated to 360°F add the oil, and sear the beef until brown.
  4. Add the remaining ingredients and bring to a boil.
  5. When the liquid comes to a boil, lock down the lid to cook under pressure.
  6. Set timer for 45 minutes and cook until the timer runs out.
  7. After the timer has expired, allow the pressure to release and unlock the lid; allowing the excess steam to release before lifting the lid fully.
  8. Add peas and stir to combine.
