Lobster Roll

Ingredients

1ea Whole Lobster
4ea Brioche Roll
45g Dukes Mayo
1ea Lemon Juice
20g Celery
1 pinch Old Bay
tt Lemon Juice
Tt Chives
tt Parsley

Procedure

  • Steam whole lobster for 11 minutes at 190°F
  • Blast chill until cold
  • Pick the lobster meat out of the shell, and chop into bite-sized pieces.
  • Take 200g lobster meat and mix with the remaining ingredients.
  • Divide lobster into toasted brioche rolls.
