Overripe bananas, 1 kg

Oat flakes, 400 g + 150 g

Raisins, 150 g

Shelled almonds with or without skin, 200 g

Coconut flakes, 100 g + 150 g

Seeded dates, 100 g

The recipe… step by step!
In the Trinity Pro food processor, chop the almonds, using the pulse function at max speed. Stop when still coarse and chunky, then remove from the food processor.
Chop the dates and raisins together, until they’re the same size as the almond chunks. Then mix with the almonds. Now blend the bananas and cinnamon on max speed until smooth and homogeneous.
Add the 400 g of oat flakes to the banana and mix on the lowest speed, then add all the other ingredients (except the 150 g of coconut flakes and the 150 g of oat flakes). Do not overmix.
Use an ice cream scoop to portion the cookies to 30 g each. Mix the remaining 150 g of coconut flakes with the remaining 150 g of oat flakes and pour on a flat tray.
Roll the 30 g portions in the coconut and oat flakes mixture. Use two frying spatulas to flatten the cookies, then finish by hand, using the coconut-oat mixture to prevent the cookies from sticking to your hands.
