Ingredients
Mediterranean Muffin
- 800gr gluten free flour
- 200gr almond flour
- 570gr extra virgin olive oil
- 570gr eggs
Chocolate Muffin
- 800gr gluten free flour
- 100gr unsweetened cocoa powder
- 520gr seed oil
- 520gr eggs
- 200gr melted chocolate or chocolate ganache
- 510gr chocolate chips
Preparation
Put all the ingredients in the kneader: half a minute at slow speed, 3 minutes at fast speed.
The result is a liquid dough, like a cream. Put it in the muffin molds with the sac a poche.
You can put the muffin in freezer to preserve them or cook them directly, add almonds or chocolate chips and granulated sugar.
Bake at 180°C for 40 minutes if the product is frozen or 30 minutes if the product is fresh.
