Safety & Hygiene

Maximum operator safety and hygiene are assured by the heating system, available in gas (900XP) or electric infrared (900XP & 700XP), which is attached to the bottom of the well and tilts along with it.

  • Thermostatically controlled temperature ranging from 120°C to 300°C, combined with an energy regulator for fast heat-up of liquids.
  • The reinforced lid is counter-balanced and equipped with a stainless steel handle for easy and ergonomic movement. When closed it can also be used as a work surface.

Precise and easy control

The manual lifting system provides precise control and ease when the Braising pan is tilting and the specially designed pouring lip avoids the risk of spillage (models also available with automatic tilting).

Flexible heating

Choose between boiling pans with direct heating, allowing food to reach higher temperatures, or indirect heating, which uses integrally generated saturated steam at 110°C within a double jacket.
